Grilled Strawberry-Tomato Bruschetta

The unusual combination of strawberries and fresh tomatoes makes a truly special quick-fix appetizer.

Ingredients

  • 8 slices French bread
  • Olive oil
  • 4 oz chèvre (goat) cheese, softened
  • 1 cup whole strawberries
  • 1 cup cherry tomatoes
  • 1 teaspoon dried thyme leaves, crushed
  • 1 tablespoon balsamic vinegar

Steps

  • 1
    Heat gas or charcoal grill. Brush bread with olive oil. Place on grill, and cook until browned. Top each slice with 1 tablespoon cheese.

    Place strawberries and tomatoes on skewers or on grill pan. Grill 3 to 4 minutes. Chop up and mix together in a bowl with thyme and balsamic vinegar.

    Divide mixture among slices of bread. Serve immediately.

    For a twist, use rosemary bread or garlic bread.

    Don’t overcook the strawberries and tomatoes or they will be too mushy; undercook rather than overcook.
