Grilled Strawberry-Tomato Bruschetta

slices French bread
Olive oil

oz chèvre (goat) cheese, softened

cup whole strawberries

cup cherry tomatoes
1
teaspoon dried thyme leaves, crushed

tablespoon balsamic vinegar

  • 1 Heat gas or charcoal grill. Brush bread with olive oil. Place on grill, and cook until browned. Top each slice with 1 tablespoon cheese.
  • 2 Place strawberries and tomatoes on skewers or on grill pan. Grill 3 to 4 minutes. Chop up and mix together in a bowl with thyme and balsamic vinegar.
  • 3 Divide mixture among slices of bread. Serve immediately.

Expert Tips

For a twist, use rosemary bread or garlic bread.

Don’t overcook the strawberries and tomatoes or they will be too mushy; undercook rather than overcook.
