Ingredients

12: oz raw shrimp

1/2: teaspoon lemon zest

1/3: cup white wine

1: cup olive oil

2: tablespoon shallots, chopped

1/8: teaspoon sea salt

1/8: teaspoon ground pepper

3: cups spinach leaves

1: whole avocado, peeled and sliced

3: tablespoon chopped fresh cilantro leaves

1/4: teaspoon sugar

1/4: cup lemon juice

1: cup cherry tomatoes, cut into halves

Directions

1 For Marinade: mix 1/2 cup olive oil, lemon zest, white wine, shallots, sea salt and pepper. Pour over shrimp, refrigerate 40-60 minute.
2 Dressing. Whisk together 1/2 cup olive oil, 1/4 c lemon juice, sugar and cilantro. Refrigerate while shrimp is marinading
3 Put shrimp into oiled grill basket over medium coals. Grill on 1 side only 1-2 minutes. Turn shrimp over and grill another 30-60 seconds until shrimp is opaque on inside and pink on edges.
4 To Serve: Place 1/2 - 1/3 cup spinach leaves onto salad plate. Arrange 1/3 of shrimp, 1/3 cup cherry tomatoes, 1/3 of avocado on top of spinach. Pour 3 tablespoons dressing over. Season with sea salt and pepper.
