oz raw shrimp

whole avocado, peeled and sliced

tablespoon chopped fresh cilantro leaves

cup lemon juice

cup cherry tomatoes, cut into halves
  1. For Marinade: mix 1/2 cup olive oil, lemon zest, white wine, shallots, sea salt and pepper. Pour over shrimp, refrigerate 40-60 minute.
  2. Dressing. Whisk together 1/2 cup olive oil, 1/4 c lemon juice, sugar and cilantro. Refrigerate while shrimp is marinading
  3. Put shrimp into oiled grill basket over medium coals. Grill on 1 side only 1-2 minutes. Turn shrimp over and grill another 30-60 seconds until shrimp is opaque on inside and pink on edges.
  4. To Serve: Place 1/2 - 1/3 cup spinach leaves onto salad plate. Arrange 1/3 of shrimp, 1/3 cup cherry tomatoes, 1/3 of avocado on top of spinach. Pour 3 tablespoons dressing over. Season with sea salt and pepper.
