Ingredients

3/4: cups olive oil

4: large garlic cloves

2: tablespoon chopped fresh thyme

5: tablespoons smoked paprika (Pimenton Dulce)

4: teaspoons sherry wine vinegar

3/4: tsp salt

1/2: teaspoon ground pepper

1/2: teaspoon crushed red pepper

12: uncooked extra-large shrimp peeled, deveined

12: 1 in longpeices smoked sausage

12: cherry tomatoes

12: 2 layer sections of red onion wedges

: non-stick vegetable oil spray

6: long metal skewers

Directions

1 Whisk oil, garlic, thyme, paptika, sherry wine vinegar, salt, pepper, and red pepper in a medium bowl to blend for glaze. Save half of glaze for serving
2 Thread ingrediants on skewers.
3 Arrange skewers on a large baking sheet. (Can be done ahead).
4 Coat grill rack with nonstick spray and preheat to medium high.
5 Brush skewers with glaze.
6 Grill until shrimp are opaque in the center, turning and brushing occasionally wth more glaze (6-8 miniutes)
7 Arrange skewers on a platter and serve with the remaining glaze
