Grilled Peanut Butter and Banana Sandwiches

Ingredients

  • 8 slices English muffin bread
  • 1/2 cup peanut butter
  • 2 medium bananas
  • 3 tablespoons butter or margarine, softened

    Spread 4 slices of bread with peanut butter. Slice bananas; arrange on peanut butter. Top with remaining slices of bread to make 4 sandwiches. Spread top bread slice of each sandwich with about 1 teaspoon butter.

    Place sandwiches, butter sides down, in skillet. Spread top bread slices with remaining butter. Cook uncovered over medium heat about 4 minutes or until bottoms are golden brown. Turn; cook 2 to 3 minutes longer or until bottoms are golden brown and peanut butter is melted.

  • Yummy! Warm, creamy peanut butter and bananas are tucked between slices of crispy bread. Peanut butter is a good source of protein, but if allergies are a problem, just substitute another type of nut butter like almond or cashew.
