I made this for my fiancée and I for a nice light summer dinner and we both loved it! The dressing makes the salad really light and refreshing. I also added pineapple to add a little more sweetness. I will definitely be making this again!

Haven't tried this yet but it sounds wonderful. To save grilling time, why not grill a double or triple batch of the chicken. Use some in the recipe and freeze the rest for a quick salad the next time. If it is as good as it sounds, you will be making it often.

I needed a salad for a Cinco de Mayo lunch we were having at work and I found this recipe. I liked all the ingredients, so thought I would try it. It was a hit with everyone who tried it and several people asked for the recipe. It was pretty easy to make, although grilling the chicken did take the most time. But, it's worth it for the flavor it adds.

Can you say fabulous?! This recipe is a taste sensation! It can be served as a main meal or side salad. The flavors dance in your mouth. This is no ordinary salad. It has summer written all over it. Despite that it''s a "salad" it eats like a hearty meal. It made me fall in love with avacadoes all over again. I recommend this be added to anyone''s favorite recipes to make over and over again.
