Grilled Italian Sausages with Pasta and Vegetables

Ingredients

1 1/4
pounds Italian sausage links (4 or 5 links)

large bell peppers, cut lengthwise into fourths
3/4
cup Italian dressing
2
cups uncooked penne pasta (6 ounces)
4
plum (Roma) tomatoes, chopped
2
tablespoons chopped fresh or 1/2 teaspoon dried basil leaves

  • 1 Heat coals or gas grill for direct heat. Grill sausages 4 to 6 inches from medium heat 15 to 20 minutes, turning frequently, until no longer pink in center.
  • 2 Brush bell pepper pieces with about 2 tablespoons of the dressing. Add to grill for last 10 minutes of cooking time, turning frequently, until crisp-tender.
  • 3 Meanwhile, cook and drain pasta as directed on package.
  • 4 Cut sausages into 1/2-inch slices; cut bell peppers into 1 1/2-inch pieces. Toss pasta, sausages, bell peppers, tomatoes and remaining dressing. Sprinkle with basil.

This was a great recipe - very quick and yummy when I have 2 kids hanging on me while I'm trying to get dinner on the table. I used Barilla Plus pasta so it was a little healthier and also used fat free Italian dressing and turkey sausage. The leftovers were good also. My son ate the tomatoes too and he never eats his veggies! I'll definitely make this again.

I got home late from work didn't feel like cooking. Needing to go grocery shopping and all I had time to thaw was Italian sausage and this was the recipe that I found, whipped it up in 20 minutes and all I could say was WOW!!! My husband and I are in love with it...and he's a picky eater. Thank You so much. It's now a permanent one in my book.
