Ingredients

1/2
cup barbecue sauce
1/4
cup honey
2
teaspoons ground cumin
4
boneless pork rib or loin chops
2
large ears corn, each cut into 6 pieces
1
cup ready-to-eat baby-cut carrots, cut lengthwise in half
2
cups refrigerated cooked new potato wedges (from 20-oz bag)
2
medium green onions, sliced (2 tablespoons)

  • 1 Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil; spray with cooking spray. In small bowl, mix barbecue sauce, honey and cumin. Place 1 pork chop, 3 pieces corn, 1/4 cup carrots and 1/2 cup potato wedges on center of each foil sheet. Spoon 3 tablespoons sauce mixture over pork and vegetables on each sheet.
  • 2 Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • 3 Place packets on grill. Cover grill; cook over medium-low heat 15 to 20 minutes, rotating packets 1/2 turn after 10 minutes, until pork is no longer pink and meat thermometer inserted in center reads 160°F. To serve, cut large X across top of each packet; carefully fold back foil to allow steam to escape.

I did mine in the oven following CateC's instructions. may have put to much vegies in each pack because the meat was done at around 25 minutes but the vegies were still raw. I just took the meats out and cooked the veggies for an extra 15 minutes and in the end it came out awesome!

I tried this in the oven as suggested and it was delicious. I used frozen carrots and had to bake them 15 minutes extra. If I use them again, I would pre-cook them before putting the packet together. Over all this receipe is a one dish WINNER.

RE BananasforBaking: Yes, this recipe can be made in the oven instead of on a grill. Heat oven to 425°F. Follow steps 1 and 2, but in step 3 place the packets in the oven. Bake about 30 minutes or until pork chops are no longer pink in center and vegetables are fork-tender.
