Ingredients

Cuban Rub

tablespoons grated lime peel
1
tablespoon cumin seed
1
tablespoon cracked black pepper
1/2
teaspoon salt
2
tablespoons olive or vegetable oil
1
clove garlic, finely chopped

Pork Chops

4
boneless pork loin or rib chops, about 1 inch thick (about 2 pounds)
Mango slices, if desired

Directions

  • 1 Heat coals or gas grill for direct heat. Remove excess fat from pork. In small bowl, mix all Cuban Rub ingredients; rub evenly on both sides of pork.
  • 2 Cover and grill pork 4 to 6 inches from medium heat 8 to 10 minutes, turning frequently, until pork is no longer pink and meat thermometer inserted in center reads 160°F. Garnish with mango slices.

This was yummmy! What a great way to break in the grilling season. (even though we grill year round!) I love the the lime and cumin flavor. I used a lime and cracked pepper seasoning and mixed everything till it smelled to my liking. Then took the sites advice and grilled corn and took some leftover rice and mixed it with a can of black beans and a can of rotel. I also grilled pineapple for desert.

I was surprised I didn't enjoy this recipe as I thought I would've. The cumin leaves a weird after taste. Wasn't our cup of tea. Don't think I'll try this one again.

This recipe was yummy, but I have to agree with one user that the lime is a little too much for me so I just omit it completely. It's really tasty and the chops come out nice and juicy.
