Grilled Chicken with Lemon, Rosemary and Garlic

The quintessential summer meal, grilled chicken just needs a simple marinade to turn out tender and terrific...and ready to eat in under an hour!

tablespoons olive oil

cup fresh lemon juice

cloves garlic, finely chopped

tablespoons chopped fresh rosemary leaves

teaspoon salt

teaspoon pepper

boneless skinless chicken breasts (1 1/4 lb)

  • 1 In shallow glass or plastic dish or resealable food-storage plastic bag, mix oil, lemon juice, garlic, rosemary, salt and pepper. Add chicken, turning to coat with marinade. Cover dish or seal bag; refrigerate 30 minutes to marinate.
  • 2 Heat gas or charcoal grill. Remove chicken from marinade; discard marinade. Place chicken on grill over medium heat. Cover grill; cook 12 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165°F).

Expert Tips

Fresh thyme can be substituted for rosemary and lime juice for the lemon juice.
