Grilled Chicken with Chipotle-Avocado Salsa

Sneak in extra flavor by marinating chicken in taco seasoning blended with honey and lime before grilling. Fresh salsa makes a perfect pairing.

Ingredients

Chicken

(1 oz) pkg. Old El Paso® Taco Seasoning Mix

tablespoons olive oil
2
tablespoons lime juice
1
tablespoon honey
2
(3 to 3 1/2-lb.) quartered frying chickens (8 quarters), skin and fat removed if desired

Salsa

1
medium tomato, chopped
1
medium avocado, pitted, peeled and chopped
2
tablespoons chopped fresh cilantro
2
tablespoons finely chopped red onion
1/2
teaspoon garlic salt
1
to 2 teaspoons chopped chipotle chiles in adobo sauce (from 7 or 11-oz. can)

Directions

  • 1 Heat gas or charcoal grill. In medium bowl, combine taco seasoning mix, oil, lime juice and honey; mix well. Brush mixture evenly over all sides of chicken quarters.
  • 2 When grill is heated, place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 30 to 40 minutes or until chicken is fork-tender and juices run clear, turning frequently.
  • 3 Meanwhile, combine all salsa ingredients; mix well. Serve salsa mixture with chicken.

You can substitute bone-in chicken breasts for the quartered fryers if you like. Just be sure to cook the chicken until it is fork-tender and the juices run clear.

To broil chicken, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning frequently.

Any cook who is worth her salt knows that dried cilantro does not even resemble fresh cilantro in taste. It would be like substituting cooked speghetti for bean sprouts...well, they kind of look alike! This salsa recipe with avacados and chipoltes (NOT jalepenos) sounds absolutely delicious; can't wait to try it.

Well I have never followed a recipe in my life and I'm not about to start now - but I made the salsa but left out the jalepenos and onions, making it more kid-friendly. I used dried cilantro - c'mon, who has fresh cilantro just lying around? I didn't have El' Paso seasoning do I made up my own chlil/meat seasoning blend, used Agave sweetener instead of honey, kept in the EVOO and voila! delicioso!
