This recipe is super-easy and fast. I used our George Foreman grill instead of outside, and regular mayo. My husband raved about how awesome the sandwich was. My daughter ate some of the chicken just cut up with no cheese and liked it too.

What does this chipotle stuff taste like? Is it a HOT Pepper or what? I am not crazy for HOT foods, burn the mouth and tear the eyes and just don't like the burning hot taste.

I had to make some changes due to what was in the fridge, however I did stick to the basic receipe. I used a trukey breast medallion insted of chicken and non fat yogurt instead of mayo and an english muffin cause that's what I had. But, the end result was delicious. I would recommend trying this. And, I left off the cheese for dietary reasons.
