Tried this recipe last night for my family...was really good, but wasn't sure about the mint flavor--thought some other herb might have been better--but all in all will probably make it again and change the seasonings a bit...

My husband loved it, going back for THIRDS! I made the salsa in the afternoon and marinated the chicken in the preserves. Then when my husband got home from work, I set it the salsa on the counter while I grilled the chicken, so it would be closer to room temperature. It was easy and really good! Definitely a success in my home!

Cold salsa on warm chicken was not a hit. Recommend heating it first without the cukes so it is more of a sauce consistency. I heated my leftover salsa sauce and it brought out the mint and flavors and then I added the salsa fruit & veggies etc. Tasted much better. Will try it again heated.

I was not fond of this receipe. The chicken was very blan. I may try it another way to see if you can marinate the chicken a head of time some how. I did put the chicken in a pan the night before with some preserves but it did nothing for it. The salsa is good. Not a hit at all in my house.

All I have to say about this recipe is MMMMMM.... I loved it!! My husband wasn't sure about the cucumbers and peaches together but he was pleasantly surprised. It was very easy to make and very tasty, I highly recommend it.

I love this recipe for the summer. I think it was perfect for a hot day because it kept me out of the kitchen (with a hot oven) by grilling outside, and the salsa is the perfect seasonal accent. I divided the salsa and left out the onions and mint for the kids, leaving the zestier one for the adults: both were great!

GREAT SUMMER CHICKEN DISH! The salsa was so refreshing and even tasting it by itself I said "Wow!" So easy to make but such a sophisticated taste! Definitley will make again and again.
