A nice change of pace from traditional varieties, this pizza is ready in 25 minutes. Plus, there’s no need to heat the oven!
can (14 oz) artichoke hearts, well drained, coarsely chopped
teaspoon red pepper sauce
cup finely shredded Parmesan cheese (2 oz)
package (14 oz) prebaked original Italian pizza crust (12 inch)
package (9 oz) frozen diced cooked chicken breast, thawed
cup chopped red bell pepper
Heat gas or charcoal grill. In medium bowl, mix artichokes, mayonnaise, red pepper sauce and 1/4 cup of the cheese.
Spread artichoke mixture over pizza crust. Top with chicken, bell pepper and remaining 1/4 cup cheese.
When grill is heated, place pizza on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 6 to 8 minutes or until thoroughly heated.
You can substitute leftover grilled, baked or rotisserie chicken for the frozen cooked chicken in this recipe. Use about 1 1/2 cups chopped cooked chicken.
