Grilled Cheesy Ham-Stuffed Chicken

large boneless, skinless chicken breasts halves (about 2 1/2 pounds)
1/2
cup herb-and-garlic spreadable cheese
4
ounces thinly sliced prosciutto or fully cooked ham
1/2
cup zesty Italian dressing

  • 1 Heat coals or gas grill for direct heat. Carefully cut a horizontal slit in each chicken breast half, making a pocket when top of chicken is lifted back.
  • 2 Spread 1 tablespoon cheese inside each chicken pocket. Top with folded slices of prosciutto. Close chicken around filling, being sure that most of the filling is enclosed. Brush dressing on chicken.
  • 3 Cover and grill chicken 4 to 5 inches from medium-high heat 10 to 12 minutes, brushing occasionally with dressing and turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.

This recipe was absolutely delicious. I took the amount of cheese I thought I'd need and put it on the plate next to the chicken so I wouldn't be dipping my chicken-germ-covered knife back in the container. I wasted a small amount of cheese this way, but it's so much better than getting sick! I had some doubts as to whether the chicken would stay together on the grill, but I was pleasantly surprised. The chicken came out perfectly done, the prosciutto was lovely and crispy, and the cheese oozed out when we cut into the chicken. Great recipe!

I tried the tip to marinate, plus used The Laughing Cow cheese spread that comes in smaller wrapped packages- that way I wasn't dipping my "contaminated" knife into a larger container. Worked really well, was really quick to put together and the end result was delicious!

I prefer to marinate the chicken breast overnight in zesty Italian dressing. Next I pound them a bit to even out the thickness for even cooking. Then I slice them and add the Boursin cheese.
