Grilled Cajun Chicken

A shake of paprika, a dash of red pepper and dried herbs--it doesn't take much to give simple chicken kickin' Cajun flavor.

teaspoon ground red pepper (cayenne)

tablespoon olive oil

boneless skinless chicken breast halves

  • 1 Heat gas or charcoal grill. In small bowl, combine all ingredients except oil and chicken breast halves; mix well. Brush oil over all sides of chicken. Sprinkle with seasoning mixture.
  • 2 When grill is heated, place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 12 minutes or until chicken is fork-tender and juices run clear, turning once.

Season the chicken breasts and place in a resealable food storage plastic bag. Tuck into a cooler and take to grill at a picnic.

For a down-South supper, serve this chicken with rice with chopped parsley, buttered sweet potatoes and crusty French rolls.

To broil chicken, place on broiler pan. Broil 4 to 6 inches from heat using grilling times as a guide, turning once.

This blend of spices is amazing! I multiply the recipe by 10 and store the mixture in a little ziploc bag. That way when i want some delicious chicken, all i have to do is brush on some olive oil and sprinkle some of this seasoning mix on. I bake it in the oven instead (350 degrees for about 40-45 min, depending on how thick the chicken breast is), because I don't have a grill.

My husband absolutely loved this chicken recipe. It had a kick, but it wasn't too spicy. We didn't feel like heating the grill the next time we made it, so we baked it at 350 degrees in the oven for about 40 minutes. It was good that way too, but the grill was better.
