Grilled Bruschetta

Ingredients

  • 1/2 cup olive or vegetable oil
  • 2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
  • 2 cloves garlic, finely chopped
  • 1 baguette (1 lb), cut diagonally into 1-inch slices
  • Sliced plum (Roma) tomatoes, if desired

    Heat gas or charcoal grill. In small bowl, mix oil, basil and garlic. Brush or drizzle oil mixture on cut sides of bread.

    Carefully brush grill rack with vegetable oil. Place bread on grill over medium heat. Cook uncovered 4 to 6 minutes, turning once, until golden brown. Top with tomatoes.

  • Spread grilled bread slices with goat cheese.
  • The name of this traditional Italian garlic bread means "to roast over coals." The amount of olive oil is generous, with extra-virgin olive oil being preferred, and the bread is often sprinkled with salt and pepper before grilling.
