If you've never tried cooking pizza on the grill, give this delicious cheesy chicken version a try, made ultra-easy with refrigerated pizza dough.
cups cubed cooked chicken
cup barbecue sauce
teaspoon chili powder
package (14 oz) prebaked Italian pizza crust
cups shredded Monterey Jack cheese (8 oz)
cup finely chopped red onion
cup chopped green bell pepper
Heat gas or charcoal grill. In small bowl, combine chicken, barbecue sauce and chili powder; mix well. Spread evenly on pizza crust. Sprinkle with cheese, onion and bell pepper.
When grill is heated, place pizza directly on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 10 minutes or until bottom of pizza is crisp and cheese is melted.
You don't need to cook it yourself to get cubed cooked chicken. Look for 9-ounce packages of diced, cooked chicken in the frozen food department of your grocery store. Each package contains about 2 cups of chicken. You can also buy cooked chicken from the deli.
The baked Italian pizza crust can be found in the bakery department, the deli area or the refrigerated section of your grocery store. It is about 12 inches in diameter.
To bake pizza, place on ungreased cookie sheet; bake at 450°F. for about 12 minutes.
