slices bacon, cut into 1/2-inch pieces

cup garlic-and-herbs spreadable cheese (from 6.5-oz container)

package (10 oz) prebaked Italian pizza crusts (two 8-inch crusts)

large plum (Roma) tomato, cut into 10 thin slices

tablespoon extra-virgin olive oil

cup chopped fresh basil leaves
  • 1 Heat gas or charcoal grill. In 10-inch skillet, cook bacon over medium heat, stirring frequently, until crisp. Drain on paper towel; set aside.
  • 2 Spread cheese evenly on pizza crusts. Top with tomato and bacon. Drizzle with oil.
  • 3 Place pizzas on grill over low heat. Cover grill; cook 4 to 8 minutes or until bottoms are deep golden brown and toppings are warm. Sprinkle basil over pizzas. Cut each into 8 wedges.

I used Laughing Cow's light garlic & herb spreadable cheese and instead of basil, I topped the pizza with shredded lettuce and a little ranch. I also baked it in the oven at 375 and they turned out great.

I usually buy pizza dough balls frozen from our local bakery or Great Harvest Bread Co. Thaw them and roll into individual pizzas. Put raw crust on grill until crusty on the bottom. Turn over onto a cookie sheet, top them with the ingredients, and return to the grill. This tastes exactly like the wood fired pizza appetizers you can get from a restaurant.
