Ingredients

cup green tomatoes
1/4
cup pearl onions
1
tablespoon minced garlic
3
tablespoons grated asiago cheese
3
tablespoons olive oil
2
teaspoons cooking wine or sherry
3
ounces fresh parsley
1
ounce fresh sweet basil
salt and pepper

  • 1 Combine all ingredients in a food processor; add olive oil slowly as needed to emulsify smoothly. Pulse until no large chunks remain. If a smoother puree is desired, continue blending and add more oil if needed to obtain a velvety texture.
  • 2 Toss through pasta or serve as a tapenade on toast points.

If your tomatoes are particularly bitter, use a sweet wine or sherry. Ripe tomatoes may be substituted in for the green, in which case a very dry wine should be used, and the garlic doubled.
