Green Slime Cupcakes

Turn plain Betty Crocker® SuperMoist® white cake mix into a Halloween dessert – cupcakes topped with a bright green, lime flavored ‘slime’ are sure to gross out your guests!

Ingredients

box Betty Crocker™ SuperMoist™ white cake mix
Water, vegetable oil and egg whites called for on cake mix box

teaspoons grated lime peel
2
teaspoons vanilla

cup butter, softened
4
oz (half of 8-oz package) cream cheese, softened
1
box (16 oz) powdered sugar
3
tablespoons lime juice

to 5 drops neon green paste food color
  • 1 Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups.
  • 2 Make and bake cake mix as directed on box for cupcakes, using water, oil and egg whites and adding lime peel and 1 teaspoon of the vanilla. Cool 10 minutes; remove from pans to cooling racks. Cool completely.
  • 3 In large bowl, beat butter and cream cheese with electric mixer on medium speed until well blended. Beat in powdered sugar until smooth. Add lime juice, remaining 1 teaspoon vanilla and the food color; beat until frosting is smooth and spreadable. Frost cupcakes.
