Mint Brownie Parfaits

These green goblin parfaits made with Betty Crocker® brownie mix and mint chocolate chip ice cream are an easy addition to your Halloween party dessert spread.

box (1 lb 2.4 oz) Betty Crocker™ Original Supreme Premium brownie mix
Water, vegetable oil and egg called for on brownie mix box

thin rectangular crème de menthe chocolate candies, unwrapped, very coarsely chopped (1/2 cup)

cup whipping cream

tablespoon powdered or granulated sugar

teaspoon mint extract

quart (4 cups) mint chocolate chip ice cream

maraschino cherries with stems

  • 1 Heat oven to 350°F. Spray 9-inch square pan with cooking spray. Make brownie mix as directed on box, using water, oil and egg and adding chocolate candies. Pour batter into pan.
  • 2 Bake 34 to 37 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool in pan on cooling rack 30 minutes. Cut into 4 rows by 4 rows. Reserve 8 brownies for another use; cut remaining 8 brownies in half.
  • 3 In chilled medium bowl, beat whipping cream, sugar and mint extract with electric mixer on low speed until mixture begins to thicken. Gradually increase speed to high and beat until soft peaks form.
  • 4 To serve, in each of 8 parfait glasses, layer 1/4 cup ice cream, 1 brownie half and 1 tablespoon whipped cream. Repeat layers once. Top each parfait with 1 cherry.
