Green Chile Corn Pudding

Green chiles give this corn pudding a New Mexican twist! For a spicier version, add some chopped jalapenos!

Ingredients

eggs, beaten
3
cans (14.75 oz each) Green Giant® cream style sweet corn
2
cans (4.5 oz each) Old El Paso® chopped green chiles
1
small garlic clove, finely chopped
3/4
cup yellow cornmeal
1/2
teaspoon baking powder
1/4
cup melted butter
4
oz shredded Cheddar cheese (1 cup)

Directions

  • 1 Heat oven to 375°F. Butter a 2-quart casserole. Mix all ingredients; pour into casserole.
  • 2 Bake uncovered for 35 minutes. Reduce oven temperature to 325°F; bake 30 to 40 minutes longer or until pudding is set and thermometer inserted in center reads at least 160°F.

I have made this several times in the last 6 mo. For a potluck at work, for a family get together & for another potluck at work. All 3 times it was made differently. We didn't have any cornmeal, so I used a hush puppy mix that had cajun seasoning it. It changed flavor to a subtle spicy kick that was really good. The 2nd time I couldn't find this recipe so I googled it & ended up w/a sweet tasting version of corn pudding. People at work liked it, it tasted weird I thought. The last time we made it, we didn't use the hush puppy mix, so it was a bit blander than the zippy version I made the first time, but still good. This is my new favorite side dish recipe (using the hush puppy mix to kick it up a notch)!
