I personally think that it is best to use plain Feta. The flavor is more distinct this way and it compliments rather than changes the flavors of foods this is used with. I also like to use regular mayo the added fat is not really that bad and the flavor is much better. I recomend that you go for a very smooth texture here as well, one way to get that is to put the Feta into a zip-lock first and just mash the feta flat several times.
