Greek-Style Shepherd's Meat and Potato Cups

Take a tip from the Greek Isles and turn ground meat into clever cups for seasoned mashed potato mix and feta cheese.

Ingredients

lb. lean ground beef
1/4
cup Progresso™ Plain Bread Crumbs
1
to 2 garlic cloves, minced
1
teaspoon dried oregano leaves
1/2
teaspoon salt

egg

cups plain mashed potato mix (dry)
Water
Milk
Margarine or butter
Salt

oz. (1/3 cup) crumbled garlic and herb feta cheese
1/3
cup pitted kalamata olives, sliced
1/3
cup chopped seeded tomato
1/4
cup finely chopped green onions

Directions

  • 1 Heat oven to 375°F. In large bowl, combine ground beef, bread crumbs, garlic, oregano, 1/2 teaspoon salt and egg; mix well. Divide mixture evenly into 8 ungreased muffin cups. Pat in bottom and up sides of each cup to form crust.
  • 2 In medium saucepan, prepare potatoes as directed on package using water, milk, margarine and salt. Add feta cheese; stir gently to mix. Fill beef-lined cups with potato mixture.
  • 3 Place cookie sheet on oven rack below muffin pan in case of spillover. Bake at 375°F. for 15 to 20 minutes or until beef is thoroughly cooked. Remove cups from pan; place on individual serving plates. Sprinkle with olives, tomato and onions.

Expert Tips

Shepherd's pie is a classic savory pie traditionally prepared from leftovers. Meat and vegetables are moistened with gravy, transferred to a pie plate, and topped with mashed potatoes. The pie is so named because it was often prepared with lamb or mutton.

Assemble the meat cups; cover and refrigerate for up to a day. Uncover the meat cups and bake, adding 3 to 5 minutes to the baking time.

Accompany this recipe with fresh steamed green beans, and bread and butter. Serve sliced melon for dessert.
