I have to cook for meat lovers and vegetarians in my household. I bought a melange of purple, red and white new potatoes at the farmers' market...the rest of the vegetables came from my garden (I added crisp cooked green beans because I am swamped with them.) For once, everyone was happy!!

My husband wanted to try a potato salad that wasn't creamy. We've been on a Greek kick so I tried this one. Absolutely amazing!!! We may never make creamy potato salad again. This is so delicious!!

I always like a make ahead dish for Christmas. I made this on Christmas Eve - it was fast and easy. Visually, it is very pretty, especially because I used a mix of purple, red, and white potatoes. The instructions are clear and precise - and the taste is fantastic! Everyone loved it. I plan to make this again, and not just for Christmas.

I started making this potato salad about 10 yrs ago. It has been a family favorite ever since! It is a delicious change from the traditional mayo based types. It is really great with tri colored rotini in place of the potatos as well!
