Greek Garlic and Herb-Stuffed Grilled Chicken Breasts

Ingredients

container (4 oz) garlic-and-herbs spreadable cheese
1/3
cup coarsely chopped kalamata olives, patted dry
1/3
cup finely chopped green onions
1 1/2
teaspoons chopped fresh oregano leaves
4
boneless skinless chicken breasts
1
tablespoon olive oil
1/4
teaspoon salt
1/4
teaspoon pepper

  • 1 Heat gas or charcoal grill. In medium bowl, stir together cheese, olives, onions and oregano. Place chicken breasts flat on cutting surface. Cut a lengthwise slit in each chicken breast forming a pocket, keeping other 3 sides intact. Stuff each chicken with cheese mixture; secure with toothpicks. Brush chicken with oil; sprinkle with salt and pepper.
  • 2 Place chicken on grill over medium heat. Cover grill; cook 8 to 10 minutes, turning occasionally, until juice of chicken is clear when center of thickest part is cut (170°F).

This was pretty good. I didn't have tooth picks so I used turkey skewers. A lot of the filling squished out so I'd be sure to use the toothpicks. The taste was good. I also had to McGuiver the filling because I couldn't get the garlic spread. I used veggie cream cheese and added the green onions and some oregano and black pepper. We'll make this again for a different way to grill chicken.

I didn't have the herbed cream cheese so I used plain lowfat cream cheese that I added a couple cloves of minced garlic and at least a full tsp of Bouquet Garni to instead. I still used the fresh oregano, olives and onions too. Also, I always baste chicken with a mixture of oil, garlic and a little white wine when grilling. I made enough for 2 meals and this was just as good reheated the next night.
