Greek Chicken Salad

Ingredients

Dressing

cup Italian dressing
1 1/2
teaspoons dried dill weed

Salad

cups loosely packed torn romaine lettuce

deli rotisserie chicken, meat removed from bone, thinly sliced

pint (2 cups) cherry tomatoes, halved
1
large cucumber, halved, seeded and sliced
3/4
cup pitted kalamata olives

thin slices red onion, separated into rings, rinsed under cold water, patted dry
1
package (4 oz) crumbled feta cheese (1 cup)

  • 1 In small bowl or tightly covered container, mix or shake dressing ingredients.
  • 2 In large bowl, mix lettuce, chicken, tomatoes, cucumber, olives and onion. Drizzle dressing over salad; toss to coat. Arrange salad on serving platter. Sprinkle with cheese.

this is very good, and you can try different rotisserie chicken flavors, I tried it with a carribean (Y)erk (not a bad word, haha, didn't want to let me post correct spelling!) chicken, it was delicious....and healthy!

Greek salad is one of my absolute favorites! I make mine like this, but I use a Greek dressing (light, of course), and put in artichokes too. Great way to use up chicken!
