Ingredients

pound lean ground beef

can (14 1/2 ounces) stewed tomatoes, undrained

medium celery stalk, sliced (1/2 cup)

cup uncooked orzo or rosamarina pasta
1/2
teaspoon salt
1/4
teaspoon ground red pepper (cayenne)
1/2
cup plain low-fat yogurt

  • 1 Cook beef in 10-inch skillet over medium-high about 6 minutes, stirring frequently, until brown; drain.
  • 2 Stir in remaining ingredients except yogurt. Heat to boiling; reduce heat. Cover and simmer about 12 minutes, stirring frequently, until liquid is absorbed and pasta is tender. Serve with yogurt.

I love this recipe! I omit the yogurt but use every other ingredient when I make this. It is easy, quick and tasty! I have made this with different types of ground meat (ground beef, ground veal and ground turkey) The ground veal was the best tasting one! My household definitely enjoys this recipe!!!

This was better than I thought it would be. I wouldn't really call it Greek...it was more like a healthy and tastier hamburger helper. I use turkey instead of beef and I added in a little lemon pepper and oregano. I also stirred in a wedge of Laughing Cow garlic and herb cheese in place of yogurt (I didn't have any on hand). It came out great!
