Granola Crusted Salmon

Sweet and salty come together in this crunchy salmon topped with granola.

Ingredients

salmon fillets, 1 inch thick (1 1/2 lb)
1/4
cup all-purpose flour
1
egg, beaten
1/2
cup Nature Valley™ oats 'n honey protein granola
1/4
cup Progresso™ plain panko crispy bread crumbs
1/2
teaspoon salt
1
tablespoon grated lemon peel
2
tablespoons grated Parmesan cheese
Additional salt and ground black pepper, if desired

Directions

  • 1 Heat oven to 350°F. Line cookie sheet with foil, and spray foil lightly with cooking spray.
  • 2 Coat salmon with flour; brush tops of salmon with egg, and place on cookie sheet. In food processor, place granola. Cover; process until large pieces are broken up and granola forms a coarse meal.
  • 3 In large bowl, mix granola, bread crumbs and salt. Top salmon with granola mixture, lemon peel and cheese.
  • 4 Bake 20 to 25 minutes or until fish flakes easily with fork. Sprinkle with additional salt and ground black pepper.

Expert Tips

Serve with steamed veggies or hot cooked brown rice.
