Bacon and gorgonzola make already delicious twice-baked potatoes heavenly.
A grapefruit spoon is super for scraping the potato from the shell.
You can cut down the baking time for the potatoes to about 30 minutes if you microwave them first for 6 minutes before putting them in the oven.
Assemble the potatoes up to 12 hours ahead, cover with plastic wrap or foil and put in the fridge. Then bake as directed in step 4.
