I made this dish for a friend of mine since he missed out on Easter dinner. Let's just say. Excellent! He said it was thousand times better than what he would have ever gotten at a restaurant. It was very tender and moist. I was looking forward to the left overs. Not good. In all honesty this dish is not good re-heated. The meat was over cooked and to me, too dry.

I made this (with the help of my mother) last Sunday, and it came out great. My one mistake was that I cooked it for too long but it still had great flavor. My dad liked it, but mom's a vegetarian, so I made the Merlot sauce with vegetable stock so she could have some too. But she didn't. Oh well! I think she's going to let me make it for the Christmas Eve dinner

Made this for Valentine's. It was wonderful. Tasty, juicy, pretty! Whenever I make a special dish like this, my husband is apt to suggest we serve it when we have company :) So, I told him it had to be very special company! (given the price of the beef), but it was definitely worth it!

This was an amazing dish. My boyfriend and I loved it! Beef was so expensive so we used a port tenderloin. Just as yummy! We will loved it and will def make this one again

This meal was tasty! Instead of stuffing the beef with Gorgonzola try a large curd cottage cheese and asparagus or zucchini mixture, I like to smoke the beef to, it's pretty easy. Just get yourself a few peices of wood, whatever you can find I used a peice of 1/4 plywood shoved in a grill and just smoked the beef for about 4 hours. After that mashed up some jalepenos and the asparagus, and stuffed the beef. After that get yourself one of those cooking strings wrap the beef but stuff with large curd cottage cheese about one tablespoon per cut slow cook in oven at 225* for 4 hours. As for the wine sauce mix in a cup rosemary, kosher salt, vegetable oil, worshishsicer sauce, and a little mustard ( I like spicy mustard) mix it all up and cook it in a sauce pan till smoking and pot on beef while still a peak temp and there you have it, I pair the beef with biscuits filled with goat cheese so tasty

I don't get the cutting instruction. If it's a whole tenderloin, just cut it vertically to within an inch of the opposite side and lay it open, I.e. butterfly. Right?

I whipped this up, with a few changes to the recipe: Instead of soft bread crumbs I used some prepackaged Italian bread crumbs (and only 1/2 a cup instead of 1 cup). That is the only change I made to the stuffing. For the sauce I used Merlot and canned jellied cranberry sauce instead of currant jelly. The Tenderloin was cooked to perfection and the sauce really complimented not only the meat but the stuffing. I had a few friends over and they just couldn't stop raving about how delicious the Tenderloin was and not a leftover in sight. I served it with Parmesan and garlic twice baked potatoes, corn on the cob, and crescent rolls. For dessert cherry jello cubed and tossed with pineapple chunks, topped with whipped cream.

Made a few changes but turned out fabulous. Added onions and garlic, and changes the cheese to parmesan. Was great, definitely try again. Also used an iron flank steak for a cheaper cut. Husband thought it was great, too.
