cups miniature marshmallows

cups milk chocolate chips
1/4
cup light corn syrup

tablespoons butter or margarine

teaspoon vanilla

cup miniature marshmallows, if desired

  • 1 Into large bowl, measure cereal. Butter 13x9-inch pan. In large microwavable bowl, microwave 5 cups marshmallows, the chocolate chips, corn syrup and butter uncovered on High 2 minutes to 3 minutes 30 seconds, stirring after every minute, until melted and smooth when stirred. Stir in vanilla.
  • 2 Pour over cereal; quickly toss until completely coated. Stir in 1 cup marshmallows.
  • 3 Press mixture evenly in pan, using buttered back of spoon. Let stand uncovered at least 1 hour, or refrigerate if you prefer a firmer bar. For bars, cut into 6 rows by 4 rows. Store loosely covered at room temperature up to 2 days.

Make this easy snack in the microwave. Measure cereal into large bowl. Butter rectangular pan, 13x9x2 inches. Microwave 5 cups marshmallows, the chocolate chips, corn syrup and butter uncovered in large microwavable bowl on High 2 minutes to 3 minutes 30 seconds, stirring after every minute, until melted and smooth when stirred. Stir in vanilla. Continue as directed in recipe.

If you spray your bowl with cooking spray before using it, you'll have less mess to clean when you're done.

Just for fun, use Cinnamon Grahams cereal instead of Golden Grahams.

This recipe is FABULOUS!! I usually try not to make things more than once, but with this one that's impossible! I've made this twice since I found it about a month ago, and it was such a hit with everyone!! from little kids to teens/young adults to parents! I find that it's just the right amount of sweetness :) Only modification was I didn't have light corn syrup so I used regular and it was fine! And even if you have someone who hates marshmallows they'll still love them! even after you tell them 50% of it is marshmallow! the only comment I got that I'm gonna try for next time is more marshmallows which you stir in after; I put about 2.5 cups in after and they still wanted more :) Another thing I tried this time around and probably will do from here on out is put them in the muffin liners (standard size); super easy and I filled them about 2/3rds of the way up and topped them off with half a small marshmallow with sprinkles. I got 48 out of it and probably could have got at least 6ish more had some not been soo big! Also, clean your hands and put a little margarine on them once you've poured the sauce over the cereal and mix with your hands; so much easier, faster and cleaner (in a sense :p)! Just be careful its a little hot! Hope you guys enjoy making these and eating them too!! Have fun! :D

I changed the butter/margarine to coconut oil and used raw honey instead of corn syrup (there's enough of that poison in the marshmallows). Once the mixture was melted, I added the cereal to it and only ended up adding about 6 cups of GG before it was too tough to stir. I then pressed it into the 9x13 pan. The squares cut very nicely and they were extra chocolately. Big fan!

This recipe was a hit with my friends, but I made some substitutions before making it. Instead of Golden Grahams, I used Honey Chex and I replaced the corn syrup with organic maple syrup. I also used dark chocolate chips. I will be making this recipe again with these few changes!
