Goat Cheese and Bacon Pops

oz (half of 8-oz package) cream cheese
package (4 oz) chèvre (goat) cheese
teaspoons dried basil leaves
paper lollipop sticks
cup chopped pecans
cup crumbled cooked bacon

  • 1 Line cookie sheet with waxed paper. In food processor, process cream cheese, chèvre cheese and 1 teaspoon of the basil until well beaten.
  • 2 Using small cookie scoop, shape mixture into balls; place on cookie sheet. Insert lollipop stick into each ball. Freeze 20 minutes.
  • 3 In food processor, process pecans, bacon and remaining 1 teaspoon basil with on/off pulses until finely ground. Roll cheese balls in bacon mixture. If needed, press mixture onto balls to stick.
  • 4 Serve immediately or refrigerate in covered container until serving time.

You can use cooked real bacon bits or pieces found in a jar at the supermarket for this recipe instead of cooking and crumbling slices of bacon.
