Gluten-Free Snickerdoodles from Scratch

Ingredients

cup sweet white sorghum flour

teaspoons xanthan gum

teaspoon cream of tartar

cup ghee (measured melted)

cup sugar

teaspoons pure vanilla

teaspoon gluten free vanilla bean paste, if desired

Topping

  • 1 Heat oven to 350?F. Line cookie sheet with cooking parchment paper; spray paper with cooking spray (without flour).
  • 2 In small bowl, mix flours, xanthan gum, cream of tartar, baking powder and salt with whisk; set aside. In medium bowl, beat eggs, ghee, 3/4 cup sugar, the vanilla and vanilla bean paste. Gradually add flour mixture, beating until well blended.
  • 3 In small bowl, mix 2 tablespoons sugar and the cinnamon. Drop dough by tablespoonfuls into topping and roll to coat. Place balls on cookie sheet; flatten slightly.
  • 4 Bake 19 to 21 minutes or until golden brown. Cool 5 minutes; remove from cookie sheet to cooling rack.

Expert Tips

Vanilla bean paste is made from ground vanilla beans mixed with vanilla extract. Adding it to these cookies boosts the vanilla flavor, but if you can’t find it, they’ll still taste great.

Ghee (clarified butter) is a butter substitute that does not contain the protein casein found in butter. It can be substituted one-for-one with oil, but not with butter. Butter contains water, which will throw off the ratios if used instead of oil or melted ghee. Ghee is found in the dairy section or baking aisle.
