Vanilla bean paste is made from ground vanilla beans mixed with vanilla extract. Adding it to these cookies boosts the vanilla flavor, but if you can’t find it, they’ll still taste great.
Ghee (clarified butter) is a butter substitute that does not contain the protein casein found in butter. It can be substituted one-for-one with oil, but not with butter.
