Gluten Free Russian Tea Cakes
These buttery melt-in-your-mouth cookie balls go by many names in recipe collections, including Mexican Wedding Cakes. They always contain finely chopped nuts and are twice rolled in powdered sugar. This holiday favorite is one of Betty's Best!

So sorry, I forgot something that may help those of you that had a problem with "crumbling cookies". I made my dough and refrigerated it over night. I rolled them while the dough was still pretty firm and used a small ice cream scoop so there wasn't much rolling time necessary.

I made these for my husband for Christmas. Made 5 dozen. They came out as nice if not better then those made with regular flour. And I just took some out of the freezer last night and freezing seemed to improve the texture even more. Thank you Betty Crocker.

These were excellent. I have made Russian Tea Cookies for years and these were excellent. I am happy to have found one of my favorite holiday cookies can be made gluten free. There are best the next day. They are as delicate as my original recipe.

The cookie "mixture" tasted great, but they fell apart immediately. No way I could roll them in powdered sugar.

Russian Tea Cakes have been my favorite holiday cookie for years. I mourned them when I had to go Gluten Free. Then I found this recipe and I knew I had to try them for myself. Very surprised on how good these were. Very close flavor to the ones made with flour. Plan on making these very year for Christmas. Thank you Betty!

HUGE disappointment. Huge waste of time & money. Followed the recipe exactly - Totally crumbled. Super dry and crumbly - wish I had tried a different recipe. Did anyone at Betty Crocker actually test this first?

I made these cookies last year and will be making them again. They tasted great and held up after they cooled. First I followed the directions and tryed to move them directly from the cookie sheet to the wire rack and they completly fell apart. On my next try I left them on the cookie sheet to cool and that worked. They were really good, you just need a few extrs cookie sheets. Happy Gluten free cooking! P.S. If you are still having trouble or want to firm them up a little more for giving away. A friend of mine froze hers overnight. Good luck!

I heeded the reviews warning that these cookies fall apart and added a bit of xanthan gum. They still crumbled to the touch/roll/bite. What made it to my mouth tasted great but the lack of structure was disappointing. I won't make these again.
