Probably one of the worst cupcakes I have ever had. I added extra lemon but still the flavor was barely there. The icing was way way way to thick , I had to cut it down with some whipping cream.

Loved the frosting!!! Made it for my "giant" white cupcake for a friend's birthday because he wanted something not too sweet. We topped off the dessert with pineapple-raspberry-orange sherbet and it got raves from all 5 of us!

A dear friend was recently diagnosed as gluten sensitive so I have been trying to encourage her by trying different gluten free recipes. We both love anything lemon so I gave this recipe a try. The frosting is delicious! However, the cake is very dense and not very flavorful. After reading the other reviews, I'm wondering if I did something wrong. I'm usually quite a good baker. If anyone has any suggestions, please feel free to comment!

I am newly diagnosed w/Celiac and love lemon cake. I added the juice of a whole lemon in addition to the lemon rind. These cupcakes, with the regular lemon frosting, which is gluten free, was so close to the real thing that I had to stop my family from eating them all! I also love the brownie mix. They keep really well in a tupperware in the fridge after making them. I put chopped walnuts in the brownies and they were great for a whole week.

This looks delicious. I can't wait to make it. As I get older, I am becoming less tolerant of foods, so will try this, as I LOVE lemon. My neighbors also need to watch the gluten, so will surprise them with these.

These were delicious! I didn't use gluten free as I could not afford that! Why do they have to make good for you so expensive? Anyway, I really liked this easy to make, didnt have to get out the mixer too! I felt like I was back in the 1900's! The icing was very good too. Albeit, I love lemons. So next time I shall add more lemon zest and maybe use a lemon cake mix. All and all this will become the basis for all my cupcakes because I am sure I can modify this to taste cinnamon, blueberry, endless!

This recipe was great. The only changes I made were substituting Betty Crocker yellow cake mix for Pillsbury Reduced Sugar Classic Yellow cake mix (they were out of Betty Crocker classic yellow) as well as adding about a pinch more lemon zest. Tip: you should need about 4/5 lemons for the amount of lemon zest required. I had to run back to the grocery store to buy more lemons! Overall, this was a fantastic, straightforward recipe which both my neighbors and family loved.

Lemon Lover's cupcakes are dense, rich cupcakes similar to pound cake. They don't fall apart like some baked goods without gluten, and they're delicious, especially when warm out of the oven or warmed a few seconds in a microwave. You wouldn't guess they're gluten free.
