This was a big hit at the party last weekend. Following advice from a review, I used frozen mango as I needed to take it in a cooler. That worked great, and was convenient but the flavor & texture of fresh are worth it if you have the time. I did use some of the Caribbean seasoning on the chicken, as others suggested. And cut grape tomatoes in half instead of plum. I think leftover salad would be nice stuffed in a pita or wrap.

Delicious! I put some of the seasoning on the chicken before grilling and it gave it some extra flavor. I never know how to pick a ripe mango, so I used frozen mango and it was perfect. A delicious summer salad!

This was a delicious change-up salad for my husband and myself. We are watching what we eat and trying to eat healthy. When I read the ingredients I realized this was a perfect alternative to the usual "healthy" low-fat, low cal dinner fare. We did the chopping and dicing together and had fun doing it! The salad makes a beautiful entree in a glass bowl. I liked the flavors very much - hubby was ok with them (a meat & potatos man)but stated he liked it as a change in the usual fare and would not put it in our usual line up of revolving meals. So beware if you, too, have a meat & potatos man! :D

I found this recipe while talking to a young coworker who said she liked Island food and needed to start cooking more. I have fixed it 3 times and have had a great response every time, needing to get or tell people where to get the recipe!! The combination of spicy, sweet and sour flavors is perfect. And the various textures are wonderful. A great summer meal or for a pot luck! A little specialty bread or muffins on the side would complete the meal!

Easy to prepare; looked just like the picture. Took it to a church pitch-in and everyone loved it and some ask for the recipe. I couldn't find pina colada yogurt so I used orange. It tasted great.
