Gluten-Free Homemade Waffles

cup almond milk, soymilk or regular milk

tablespoons sunflower oil or ghee (measured melted)

cup tapioca flour

cup white rice flour

cup sweet white sorghum flour

tablespoons garbanzo and fava flour

tablespoons potato starch flour

teaspoon gluten free baking powder

teaspoon salt

teaspoon baking soda

cup gluten free maple-flavored syrup

  • 1 Heat waffle maker. (Waffle makers without a nonstick coating may need to be brushed with vegetable oil.) In blender, place eggs, milk, oil, sugar and vanilla. Cover; blend until mixed. Add all flours, the baking powder, salt and baking soda. Cover; blend until well mixed.
  • 2 Pour slightly less than 1 cup batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops and waffles are browned on both sides. Carefully remove waffle. Repeat with remaining batter. Serve waffles with syrup.

Expert Tips

Garbanzo bean and fava flour is also called “garbanzo fava bean flour” or “garfava flour.”

For extra-special waffles, serve with chopped mango, fresh blueberries and raspberries. Sprinkle with powdered sugar before serving.

Recipe Variation Gluten Free Homemade Pancakes: To make pancakes, heat oiled griddle or skillet over high heat. Pour enough batter onto griddle to make 5-inch pancakes. Reduce heat to medium-high; cook until bubbles appear around outer edges of pancakes. Turn pancakes; cook until golden brown on both sides.
