Meat Loaf

lb lean (at least 80%) ground beef
1/2
cup crushed gluten free cracker crumbs

tablespoons milk

tablespoons gluten free ketchup

tablespoon gluten free Dijon mustard

teaspoon dried sage leaves

small onion, finely chopped (1/3 cup)

cup gluten free ketchup

teaspoon gluten free Dijon mustard

tablespoon packed brown sugar
  1. Heat oven to 350°F. In large bowl, combine all meat loaf ingredients. Spread mixture in ungreased 8x4- or 9x5-inch loaf pan.
  2. In small bowl, combine all glaze ingredients. Spread over meat loaf.
  3. Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer inserted in center of loaf reads 160°F. Drain. Let stand 5 minutes before slicing.

Tips
You can top the meat loaf with your favorite gluten free barbecue sauce or just gluten free ketchup instead of using the glaze.
To crush crackers, place a few crackers at a time in a plastic bag. Seal the bag, and crush crackers into fine crumbs with a rolling pin or the flat side of a meat mallet.
