These were very easy to make and my children loved them. I thought they were a little bland so I tweaked the recipe a little. Changes I made: 2/3 cup parmesan cheese, 1 tsp. seasoned salt, omitted the regular salt, 1/4 tsp garlic powder and added 1 tsp Italian seasoning. After my children tried the new ones they liked them even better. I made a large batch and froze them for school lunches.

I've found that if you take the small skinless/boneless pieces of chicken breast, add a few spices, like season-all, a dash of cumin, dried garlic, put in a bowl, and grind with a hand blender, then shallow fry as normal, the texture of the nuggets will be more like the fast food ones. But much healthier. You don't have to add all those spices, it's just how I and my children prefer it.

Tried this recipe to the letter. It's isn't chicken nuggets as I knew pre-GF, but they are a good alternative. Pretty good with Honey-mustard.

Next time I'll grease the foil--half of the breading came off when I turned them. :( Other than that, the recipe was simple and they smell great.

My boyfriend, who isn't gluten free, and I made these last night. They were sooo yummy! It was so nice to have chicken nuggets after not having them for so long! We both really enjoyed the corn chex as the breading. We did kick things up a bit and substituted chili powder for paprika, added more garlic powder and added red pepper flakes. It was a yummy recipe and I have passed it along to my other Gluten free friends!

I prepared these for my family this weekend and they were a big hit! For the first time in a long time everyone at the table loved everything on their plate, and anyone with a picky eater knows that is quite an accomplishment. I will definitely make these again in the very near future.

Very tasty! Kids loved them too and ate them up. "Way better than the frozen nuggets," they said. I will make a double-batch next time! Forgot the parmesean cheese and they still turned out great. Left out the salt. Added a bit more seasoning salt, garlic and paprika. Perfect! Foil on cookie sheet keeps nuggets from sticking and makes cleanup easy.

I thought these were great. I read the previous reviews before cooking and kicked up the spice by adding chili powder and cayenne pepper...delish! no doubt a keeper. Thank you!
