Gluten-Free Chex™ Peach Crumble

medium fresh peaches, peeled, thinly sliced (5 cups)

cup packed brown sugar
1/2
cup rice flour blend

pouch Gluten Free Chex™ oatmeal (from 9.54-oz box) or 1/2 cup Gluten Free Chex™ oatmeal (from 16-oz bag)
1/3
cup butter or margarine, softened
1
teaspoon ground cinnamon
3/4
teaspoon ground nutmeg
Gluten-free vanilla ice cream, if desired

  • 1 Heat oven to 375ºF. Grease bottom and sides of 8-inch square (2-quart) glass baking dish with shortening.
  • 2 Spread peaches in baking dish. In medium bowl, stir remaining ingredients except ice cream until well mixed, cutting in butter with fork or pastry blender; sprinkle over peaches.
  • 3 Bake about 30 minutes* or until topping is golden brown and peaches are tender when pierced with fork. Serve warm with ice cream.

Expert Tips

Apple Crumble: Substitute 5 cups peaches with 6 cups peeled and sliced tart cooking apples. Blueberry Crumble: Substitute 5 cups peaches with 5 cups fresh or frozen blueberries; bake 27 to 30 minutes.

*If using frozen peaches, bake 25 to 30 minutes.
