The perfect recipe for an abundant peach season. After one taste, you’ll want to make it again and again.
medium fresh peaches, peeled, thinly sliced (5 cups)
cup packed brown sugar
cup rice flour blend
pouch Gluten Free Chex™ oatmeal (from 9.54-oz box) or 1/2 cup Gluten Free Chex™ oatmeal (from 16-oz bag)
cup butter or margarine, softened
teaspoon ground cinnamon
teaspoon ground nutmeg
Gluten-free vanilla ice cream, if desired
Heat oven to 375ºF. Grease bottom and sides of 8-inch square (2-quart) glass baking dish with shortening.
Spread peaches in baking dish. In medium bowl, stir remaining ingredients except ice cream until well mixed, cutting in butter with fork or pastry blender; sprinkle over peaches.
Bake about 30 minutes* or until topping is golden brown and peaches are tender when pierced with fork. Serve warm with ice cream.
Apple Crumble: Substitute 5 cups peaches with 6 cups peeled and sliced tart cooking apples.
Blueberry Crumble: Substitute 5 cups peaches with 5 cups fresh or frozen blueberries; bake 27 to 30 minutes.
*If using frozen peaches, bake 25 to 30 minutes.
