Gluten-Free Barbecue Chicken Mini Pizzas

Two favorites--chicken and barbecue sauce--bake up into these gluten-free mini pizzas! Thanks to Pillsbury® Gluten Free refrigerated pizza crust dough for making it so easy.

cups shredded or diced cooked chicken
cup gluten-free barbecue sauce
cup shredded mozzarella cheese or Colby-Monterey Jack cheese blend (4 oz)
  1. Heat oven to 400°F. Grease 2 cookie sheets and hands. Divide dough into 6 pieces; press each into 6-inch round. Place 3 rounds on each cookie sheet.
  2. Bake 8 minutes. In bowl, mix chicken and barbecue sauce. Top crusts with chicken mixture and cheese.
  3. Bake 6 to 9 minutes longer or until crusts are deep golden brown and cheese is melted.
