cups shredded carrots (2 to 3 medium)

cup shredded peeled apple

cup coconut

cup raisins

cup sliced almonds

Directions

  • 1 Heat oven to 350°F. Place paper baking cup in each of 18 regular-size muffin cups or grease with shortening. In large bowl, beat eggs, oil, milk and vanilla with wire whisk until well blended. Add flours, brown sugar, baking soda, cinnamon and salt; stir just until dry ingredients are moistened. With spoon, stir in carrots, apple, coconut, raisins and 1/2 cup of the almonds.
  • 2 Divide batter evenly among muffin cups, filling each about 3/4 full. Sprinkle remaining 1/4 cup almonds over batter.
  • 3 Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from muffin cups.

Great muffin! Sweet enough to remind you of a mix, which is what we like. Versatile...I've never messed these up even with substituting parts of the flour for oat flour or buckwheat flour. Add dried cranberries for a change of pace. You can add 1/2 cup milk and cut the oil down to 1/2 cup and they still taste good. I don't know why they said it takes 50 minutes to make these...seems to go faster in my kitchen. Just waiting for the kids to get hooked on these instead of their regular boxed blueberry muffins. They are spoiled/picky.
