FABULOUS! I made these just how the recipe is, except for almonds, didn't have any, and they were just so great. I can tell I will be making these in the future for sure!

I made these this morning and both of my sons (2 and 7) and my husband loved them. They were quite easy to make and will probably become a go-to morning muffin recipe for our family.

I made these recently for a meeting and they were delicious. A week later, I had some ripe bananas, and in looking for a banana bread recipe, I saw this recipe. I replaced the apples with mashed bananas, it was fantastic. I liked it better than with the apples. In both recipes, I made 12 muffins, and made a small loaf (2"x4") with the remainder. The loaves worked out well, they just had to cook a few minutes longer. I am considering making small loaves for holiday gifts.

These sound delicious. But my comment has to do with the site. Why can't I add a new folder to my recipe box? I click on new folder, and it highlights but will not let me type in the title I want to put in. Thanks.

Kookie said These muffins are very tasty and moist - glorious to eat any time of the day! Sometimes I omit the coconut and other times I've made them with other nuts, such as chopped walnuts. The 1st time I made it I got the recipe from the GM unbleaced flour bag. Thanks.

I made this muffins for the first time yesterday. I substituted melted butter instead of vegetable oil and I uses pecans instead of almond. Muffins are Moist and AMAZING.

Made these yesterday from the same recipe on the back of the Gold Medal Unbleached All Purpose flour bag. As called for on the bag,used two cups of Unbleached All Purpose instead of the regular and whole wheat flours. They were delicious, even though I FORGOT the coconut. Took them to our family after Thanksgiving potluck and people were taking them home to have with breakfast. VERY good!
