I thought these would be more like a granola bar (harder and crispy), but they were more like a pumpkin bread. It was very tasty but even when I doubled the serving size, I consider that a very small serving. I wanted to substitute the oil with applesauce but forgot. But I enjoyed them very much just the same.

I made these for my husband to take to work and share with the guys and they were a big hit!! I left out the nuts and they were still good. I think they would also be good if you added in some raisens.

This recipe is amazing! I love anything pumpkin, but this tops them all! So much better than your standard pumpkin pie!! And it didn't take me two hours to make either! Love that it has all that fiber!

In response to the comments about whether this is low calorie, the nutrition information indicates that there are 160 calories per serving, which considering that many desserts have far more than that per serving this is pretty low. And without the glaze they would probably be more in the 140 per serving range. Additionally, I am not arguing that there are not ways to make pumpkin bars with no oil and no flour as you stated, but at that point they are starting to be a different kind of dessert than the one described here. The oil and flour are what give sweet breads and cakes (which is what this is) their fluffiness and texture. And I agree with Jacquline. If you are going to express that you have a better recipe, please provide the alternative for us to evaluate in comparison.

I am going to try this with unsweetened applesauce instead of the oil. I have read that any recipe that calls for oil can have the applesauce as a substitute. If it works, this will certainly bring down the calorie count on this one!

My friends & family loved these. I used a rubber mallet to crush the cereal in a baggie, it was easier. Just make sure you don't cover them too tightly ( I shouldn't have used plastic wrap) because the glaze will melt, but they were still delicious! They are asking for more.

This is the best dessert recipe I have made. All made out of scratch.. it is SOO moist and the pumpkin taste is PERFECT. The walnuts are a perfect touch. I would make these again!
