Ginger Peanut Butter Dip

medium green onions, sliced ( 1/2 cup)

teaspoons finely chopped gingerroot

cloves garlic, finely chopped

cup peanut butter

cup chicken broth

tablespoon packed brown sugar

to 1/2 teaspoon ground red pepper (cayenne)

package (3 ounces) cream cheese, softened
Assorted raw vegetables and crackers, if desired

  • 1 Heat oil in 10-inch skillet over medium-high heat. Cook onions, gingerroot and garlic in oil about 2 minutes, stirring frequently, until tender.
  • 2 Stir in remaining ingredients except vegetables. Cook about 2 minutes, stirring constantly, until hot.
  • 3 Serve hot dip with vegetables.

If mixture thickens after standing, stir in a few tablespoons of chicken broth.
