i made these carrots for dinner tonight. i did not have right at hand crystalizied ginger so i use ground ginger. and i did not chop up my carrots i use whole baby carrots with their hair on them and this dish was yummy and i also used brown sugar instead of white sugar, it was not too sweet or ginger it was just right i will make these again!

Very tasty and easy to make, however I would not say it serves six. It only adequately serves 4 people.
